It’s the Who’s Who of the California wine world in this episode of SommTalks. Tune in to hear informative and passionate Kerrin Laz talk about her access to the wines she pours in her Yountville tasting room K. Laz Wine Collection.

Laz is consider THE authority on California wine, spending over a decade at Dean and DeLuca, sourcing and selling the most sought after wines in the Napa Valley. She provides access to wines from wineries that may not allow visitors or don’t open to the public, and have such limited production that access to a tasting in virtually improbable.

Laz’s ten years as the arbiter of fine wine with Dean & DeLuca allowed her the opportunity to taste then introduce these wines to the public, even before many had garnered their ratings and cult status. Providing wine to consumers ahead of the “popularity/ratings” curve was her mark and she carries this on at K. Laz Wine Collections.  The collection is available for sale or for tasting in one of the four tasting options: The Taster, The Artisan, The Cult or The Centurion. There’s also a wine club consumers can join to receive regular shipment, tailored to one’s palate.

Most of the wines she champions are still privately owned, typically by a family, rather than a large conglomerate. She appreciates her symbiotic relationship with her wineries, as well, exposing them to her ever changing clientele as their winery wine club members may be aging.

Laz continues to taste newer and up-and-coming wines to help place them in the competitive California wine landscape. Hear about the tailored tastings at K. Laz, from a Cabernet Sauvignon tasting only to one including Pinot Noir with Chardonnay. Each tasting appointment is crafted for the desires of the client so each tasting is unique. Hear about the climate in this tiny bowl, Lovall Valley, where Winemaker Vance Rose grows Sauvignon Blanc for Grieve Winery. Perched on the border of Napa and Sonoma, cool air from Carneros is just a stones throw away yet this tiny micro-climate is even cooler. Rose grows a few clones of Sauvignon Blanc and they have a longer growing season, yielding amazingly complex flavor for this generally simpler grape. In 1998, two legendary French wine gentlemen Jean Pierre Thibaud and Jacques Louis de Montalembert combined forces to launch their own property Bodega Ruca Malen, producing wines of Argentina. Tune in to hear Winemaker Pablo Cuneo talk about the Malbec and Cabernet Sauvignon, along with Chardonnay, Syrah and Pinot Noir. With head Chef Lucas Bustos heading up their in-winery dining room, the tasting experience is a work of art. SOMMTALKS Wine Tasting Series: Sommelier John McDaniel of Acanto

Sommelier Jon McDaniel has something important to say– he loves his Italian wines. Wine Director at Chicago’s Acanto, along with the rest of Lawless Restaurant Group’s properties (Beacon Tavern, The Gage, The Dawson), McDaniel reaches far and wide with his mostly Italian wine list, which includes approximately 500 wines from all 20 regions across Italy. McDaniel discusses his passion for Italian varietals, even if they may come from regions outside of Italy, such as Virginia and California. The wines we’re tasting today include:

2012 Sartori di Verona, Bianco Verenese IGT, Gargenega– 15-20% of these grapes are produced in “appassimento” style (dried for 40 days), producing a wine with lots of layers. This white wine is a great pairing wine and has decent amount of acidity to work with the pasta and meat dishes at Acanto. It’s a full body white wine made from a classic grape from the Veneto region yet done in a more experimental manner, borrowing a technique more commonly used for red wine, in particular Amarone.

2010 Nebbiolo, Barboursville, Virginia The shorter growing season in Virginia is a challenge, as is the rain. Nevertheless, this volatile area produces stunning Nebbiolo, in a more modern manner with more fruit, moderate oak and a lush mouth feel.

Hear how this Pinot Grigio gets that hue and more on outstanding and unusual grape varietals. Today we tasted the following:

2015 Pullus Pinot Grigio, Slovenia Rust in hue, this rose of Pinot Grigio is a fine easy summer sipper. Great with light fish and salads, it could also stand up to one of the seared fish dishes on the menu. The fruit is bright, the acidity moderate to high and the eye appeal amazing.

2014 San Salvatore Aglianico, Campania, Italy  This is one of the many unusual selections across the list at the Pig, hailing from the lesser known but impressive Campania region.  While there’s a touch of oak, it’s mostly bright red fruits shining through in this lighter bodied Aglianico wine.

Matthew Bills on Wines with Dry-Aged Beef at David Burke’s Primehouse

Listen to our interview today with Matthew Bills, who talks about his travels to Argentine wine country, their premium Black Angus beef from Creekstone Farms ,  and the impact of dry aging beef in Himalayan salt on wine pairing. Bills also waxes tells us about his love of the Napa Valley, his private label Oregon Pinot Noir that’s in the works and his road trip across Washington State to discover and fall in love with the wines of Horse Heaven Hills.

Take a listen and stay tuned for the next episode where we’ll pair aged wine with aged beef, taking into account the flavor changes the beef undergoes as it aged, and how this twists the traditional steak and wine pairing.

Today we tasted the following two wines.

2014 Zuccardi Altamira, Concreto Malbec Valley de Uco, Mendoza, Argentina grown on calcium carbonate and aged in concrete egg for a true expression of Malbec. It’s savory, and peppery with a hint of smoked meat.

2013 Vall Llach Embruix de Vall Llach,Priorat, Spain (blend of 25% Garnacha, 24% Merlot, 17% Syrah, 17% Cabernet Sauvignon and 16% Carinyena) -50% aged in new French oak, this brooding red wine hints of sweet tobacco and baked blackberry pie. Bills calls this a pair for a 55 or 75 day aged steak, since it has just enough acidity to stand up to the earthy aged beef.

Finally, we taste an unfiltered Niagara Pinot Noir from Norman Hardie’s Prince Edward Country, Southern Ontario, Canada winery, located a couple of hours from Toronto and about 4-5 hours from Montreal. Hear Ford’s pairing suggestions to dishes at The Bristol, as well.
