Wine Talks is one of the first all-audio wine books available online.  An extension of the veteran journalist’s popular podcast SommTalks on iTunes, the audio book covers every aspect of wine through conversations with winemakers Blair and Caroline Guthrie of Guthrie Family Wines and Stewart Cellars, along with special expert-guests Redd Restaurant Master Sommelier William Sherer and K. Laz Wine Collections Founder Kerrin Laz. The audio book has 13 conversations that average 35-40 minutes each, along with 10 wine tasting interviews from SommTalks podcast. “We feel the best way to educate consumers on wine today is through live conversations around a table full of wine glasses,” Ms Shatkin says.  “The growth and popularity of podcasts and widespread use of mobile devices motivated us to deliver this engaging wine resource in this audio format,” she adds. About the Authors: Laura Levy Shatkin, a veteran multimedia journalist and host of SommTalks podcast, has spent eighteen years crafting well-researched wine and food content for Chicago Tribune, Chicago Reader, Napa/Sonoma Magazine and on broadcast TV show Taste on NBC5 Chicago. Her never-ending passion for wine and food led her to Blair and Caroline Guthrie, who established their own wine label Guthrie Family Wines in 2013 and also make wine for their family winery Stewart Cellars in Yountville, California. The book was recorded in the Napa Valley, during the monsoon rainstorms in winter of 2017.

SOMMTALKS Wine Tasting Series: Sommelier John McDaniel of Acanto

Sommelier Jon McDaniel has something important to say– he loves his Italian wines. Wine Director at Chicago’s Acanto, along with the rest of Lawless Restaurant Group’s properties (Beacon Tavern, The Gage, The Dawson), McDaniel reaches far and wide with his mostly Italian wine list, which includes approximately 500 wines from all 20 regions across Italy. McDaniel discusses his passion for Italian varietals, even if they may come from regions outside of Italy, such as Virginia and California. The wines we’re tasting today include:

2012 Sartori di Verona, Bianco Verenese IGT, Gargenega– 15-20% of these grapes are produced in “appassimento” style (dried for 40 days), producing a wine with lots of layers. This white wine is a great pairing wine and has decent amount of acidity to work with the pasta and meat dishes at Acanto. It’s a full body white wine made from a classic grape from the Veneto region yet done in a more experimental manner, borrowing a technique more commonly used for red wine, in particular Amarone.

2010 Nebbiolo, Barboursville, Virginia The shorter growing season in Virginia is a challenge, as is the rain. Nevertheless, this volatile area produces stunning Nebbiolo, in a more modern manner with more fruit, moderate oak and a lush mouth feel.

SOMMTALKS Wine Tasting Series Continues with Rachel Driver Speckan

Join us as we continue our wine tasting series with Rachel Driver Speckan of City Winery Chicago. Today, we sip on a dry Riesling from Oregon , one Speckan admires and still has a bottle awaiting her, tucked in her home cellar. While she admits that dry Riesling can be difficult to explain to customers and isn’t exactly “hotcakes” jumping off the list, this is one she gets excited to talk about.  The producer, Big Table Farm, is a small producer, making most wines in Oregon’s Willamette Valley.

Next, we take a virtual journey to South Africa on Speckan’s life-altering trip. She met with winemaker Hannes Storm in the South Cape of South Africa (@StormWinesSA). We tasted his classic Pinot Noir, which comes from land with close proximity to the ocean. Speckan firmly believes it has an old world soul and it’s one of her current obsessions.

Virtually sip a few great wine recommendations by Chicago’s fabulous Purple Pig Wine Director Liz Martinez. Hear about the dominantly Old World wine list and how Martinez pairs it to 2014 James Beard Award Winning Rising Star Chef Jimmy Bannos, Jr. Curious about orange wine? Hear how this Pinot Grigio gets that hue and more on outstanding and unusual grape varietals. Today we tasted the following:

2015 Pullus Pinot Grigio, Slovenia Rust in hue, this rose of Pinot Grigio is a fine easy summer sipper. Great with light fish and salads, it could also stand up to one of the seared fish dishes on the menu. The fruit is bright, the acidity moderate to high and the eye appeal amazing.

2014 San Salvatore Aglianico, Campania, Italy  This is one of the many unusual selections across the list at the Pig, hailing from the lesser known but impressive Campania region.  While there’s a touch of oak, it’s mostly bright red fruits shining through in this lighter bodied Aglianico wine.

Matthew Bills on Wines with Dry-Aged Beef at David Burke’s Primehouse

Listen to our interview today with Matthew Bills, who talks about his travels to Argentine wine country, their premium Black Angus beef from Creekstone Farms ,  and the impact of dry aging beef in Himalayan salt on wine pairing. Bills also waxes tells us about his love of the Napa Valley, his private label Oregon Pinot Noir that’s in the works and his road trip across Washington State to discover and fall in love with the wines of Horse Heaven Hills.

Take a listen and stay tuned for the next episode where we’ll pair aged wine with aged beef, taking into account the flavor changes the beef undergoes as it aged, and how this twists the traditional steak and wine pairing.

Today we tasted the following two wines.

2014 Zuccardi Altamira, Concreto Malbec Valley de Uco, Mendoza, Argentina grown on calcium carbonate and aged in concrete egg for a true expression of Malbec. It’s savory, and peppery with a hint of smoked meat.

2013 Vall Llach Embruix de Vall Llach,Priorat, Spain (blend of 25% Garnacha, 24% Merlot, 17% Syrah, 17% Cabernet Sauvignon and 16% Carinyena) -50% aged in new French oak, this brooding red wine hints of sweet tobacco and baked blackberry pie. Bills calls this a pair for a 55 or 75 day aged steak, since it has just enough acidity to stand up to the earthy aged beef.

Tune in for this week’s SommTalks wine tasting with the energetic and passionate Michael Muser of Grace. Together, we tasted and talked about the following wines of The Loire Valley: 

2013 Pascal Janvier , Jasnieres, Chenin Blanc, Loire Valley

Muser’s passionate about wine made with heart and enjoys meeting and knowing the winemakers and understanding their philosophy, as is the case with Janvier.  Muser ponders if vintage really matters, as he appreciates the winemakers’ product year in and year out. He jokes about loud sippers too.

“Slurping and excessively far away spitters” fascinate him.  “The Slurp is NOT for novices,” he says as he chokes on a air-pulling slurp of this lovely Loire Valley gem.

2012 Domaine Guiberteau, Samur Rouge, Cabernet Franc, Loire Valley

Don’t worry about butchering the pronunciation” Muser says of this French wine…. just taste the wine. Cabernet Franc is his week spot, he admits, but he loves it in all its iterations.  “It’s cute and  funny, ” Muser says. “It’s a polite red wine, it knows it’s place and it backs off, with that classic French grit, like a crochety old guy smoking cigarettes.”
