Tune in for Part 2 of my conversation with Amy Lutchen of Del Frisco’s Chicago. During this tasting episode, we taste with Amy.
The first wine is the lovely and sprightly Castell d’Age, Rose Cava, from Catalonia, Spain. Amy loves the deep color of this sparkling rose along with it’s high energy, rich flavor and high intensity. Lutchen loves it with lamb chops or with a burger. With a touch of residual sugar, it also pairs well with their tuna tartare or crab cakes.
The white wine we tasted was:
Saint Bris, Sauvignon from Chablis, Burgundy
This wine showcases the soil type in the region, that chalky soil which has loads of minerality. It’s a dry white wine, great to pair with oysters or the shellfish platter, bringing out more brighten in the dishes. It also goes nicely with blue cheese in their wedge salad. The wine has a mild saline quality.
Finally, we move into a Napa Valley red wine- Old world in style with new world fruit. It’s the Van Strasser 2012 Cabernet from Diamond Mountain district . This is a cabernet that made Lutchen re-appreciate and re-discover Napa Valley reds. She adores the earthy mineralogy and the elegant tannins. The mountain fruit expresses so beautifully, with a rich velvety finish yet in a rustic style. Tune in to hear her expert descriptions of these wines and please share this episode with your friends.
